Waffle Recipe, Better Today Than It Was In The Middle Ages

Waffles have been a favorite breakfast food for many years but they did not really start out that way. The origin is from the Middle Ages where waffles were made by placing a combination of barley and oats between two metal plates of a wafer iron that were connected by a hinge and could be closed and opened by a wooden handle. Today's Waffle Recipe adds leavening to make the waffle rise and become light and fluffy instead of flat and crispy as they were originally.

Many different countries have their own ways of making waffles. American waffles are served most of the time with breakfast and they use baking powder to make them rise. The pilgrims arriving in American in 1620 where the ones who brought the waffle over from Holland, but they made the thick Belgian waffles. Belgians are also called Brussels Waffles and these rise more than the American type. In the streets of Belgium and nearby countries they are offered by vendors on the street and they are covered with a sprinkling of powder sugar and whipped cream and chocolate can also be spread on top.

Leige Waffles come from eastern Belgium and are much denser and sweeter than the Belgium waffle. They were made with brioche bread in mind and they crunch when you eat them because of pearl sugar that is sprinkled on before cooking then caramelizes in the baking process. Street vendors sell these all over Belgium plain or cinnamon flavored. Hong Kong has a waffle called the grid cake and is sold in the street. This is a popular snack and peanut butter and sugar are usually spread on one side and then it is folded to eat. The Dutch make a waffle that they slice in half while warm and load one up with syrup, brown sugar, butter and cinnamon and then put back together. In the Scandinavian countries waffles are heart shaped and served with jam instead of syrup.

Pancake batter is similar but it much thinner than waffle batter. It is thick so it will not escape from the waffle iron so easily. Waffle irons come in many different shapes and sizes including the ones with a long handle that are made of a metal and clamp shut to be cooked on an open fire or over the flame on the stove. More common are the electric style of waffle iron. Waffle irons come in several shapes like round making waffles in 4 sections or some only produce 2 sections. Some irons are designed to make different patterns on the surface of the waffles and some are deeper to make the famous Belgian Waffle. Make waffles for any meal and for desserts.

One of the best recipes for waffles is the buttermilk waffle. To make them combine one and two thirds cups of flour, one and one half teaspoon baking powder, one half teaspoon baking soda, and one fourth teaspoon of salt in a large bowl. In another bowl combine 4 large eggs and two cups of buttermilk and whisk well. Pour this over the flour mixture and stir with a wooden spoon. Melt two whole sticks of butter and pour into the bowl. After mixing your batter will be a bit lumpy and it should be. Continue cooking in waffle iron per manufacture's instructions. Serve warm with syrup, honey or jam.

If you have a Belgian Waffle maker that is slightly larger than a regular one make these treats for dessert. Belgian waffles take a little more work but they are worth it in the end. To make Belgian waffles tear off a large sheet of wax paper. On the wax paper you will need to sift one and one fourth cup cake flour, two teaspoons of baking powder, one fourth cup of sugar and a pinch of salt. Separate four eggs and put the four yolks in a large bowl. Set the whites aside as you will need them later. In the same bowl add one and one half cup milk and one and one half teaspoon vanilla and whisk. Stir in one half cup melted butter. Now gradually add the dry ingredients on the wax paper stirring in well. In a small bowl beat the four reserved egg whites until they become fluffy and stiff but not dry. Fold these into the batter carefully. Bake per manufacturer's instructions in a Belgian waffle maker then dust with powdered sugar and top with whipped cream and chocolate chips. You can also slice strawberries or other fruits on top.

For a waffle with some different flavor make Banana Nut waffles. Mix together 1 and three fourths cups flour, 1 tablespoon baking powder, on fourth of a teaspoon of salt, and one fourth of a cup wheat germ. In a small bowl place the yolks of 2 eggs saving the whites, beat the yolks well. Add one fourth cup vegetable oil and 1 and a half cup milk and combine well. Add the egg mixture to the flour mixture and mix very well. In a grinder grind one cup of sunflower or pumpkin seeds or walnuts and incorporate it into the batter. Peel a banana and mash it well adding it to the other ingredients and then add three tablespoons of yogurt that is plain. Take the egg whites and beat them into stiff peaks and fold them into the batter. Add a little more milk if it seems to be too thick. Finally cook in a regular waffle press and serve with syrup or with honey.

Waffles have come a long way since the Middle Ages. Instead of being wafer thin they are thick and fluffy and can be served with just about anything from syrup to chocolate. Some waffle recipes even include savory suggestions like serving waffles with chicken. In many countries they are still sold by street vendors as they were in the fourteenth century and you can find them in just about every restaurant. They are easy to make and your family will love them for meals and as a delectable dessert.
